The teacher who was celebrating her birthday is a diabetic so I baked four chocolate diabetic cupcakes with chocolate diabetic icing (red patty cases).
A couple of other teachers at the school are ceoliacs so the rest of the cupcakes were baked using a chocolate gluten free recipe and alternately iced in white and chocolate buttercream icing (blue patty cases).
Each cupcake was then decorated in handmade fondant toppers with a school related theme - a blackboard with "abc", apple, book, rolled certificate and an "A+" sign.
These were so much fun to create and I hope the birthday girl enjoys them.
