Tomorrow is my daughter's birthday and she wanted me to bake some cupcakes to take to school. This is her first year at big school so she is extremely excited about taking these to her new kindergarten class. Next weekend we will be celebrating her birthday by throwing a H2O - Just Add Water - Mermaid Party so I decided to keep with the ocean theme for these cupcakes. I baked mini cupcakes (as the kids tend to eat the icing and decorations only). They are iced in blue buttercream icing to resemble the water then topped wih handmade fondant ocean decorations - pink seashells, yellow starfish and orange seahorses all sprinkled with edible glitter dust and finished off with silver cachous. These cakes were created for a teacher from our local primary school to take in to celebrate another teacher's birthday. The teacher who was celebrating her birthday is a diabetic so I baked four chocolate diabetic cupcakes with chocolate diabetic icing (red patty cases). A couple of other teachers at the school are ceoliacs so the rest of the cupcakes were baked using a chocolate gluten free recipe and alternately iced in white and chocolate buttercream icing (blue patty cases). Each cupcake was then decorated in handmade fondant toppers with a school related theme - a blackboard with "abc", apple, book, rolled certificate and an "A+" sign. This cake was created for my nephew who requested the blue construction hat from the Women's Weekly Birthday Cake book. I decided to make it a little more real life looking. I didn't want the candles to be placed into the cake so decided to create the Birthday Zone corner. Rocks made from fondant for the candles and the "CAUTION BIRTHDAY ZONE" sign. Of course he wanted the workmans tools as well (just like the picture from the cook book). I would have liked to make these from fondant however we have been away and was not back in time to do these. I think he much preferred the real toys though so he could play with them on the day. The cake was a plain buttercake (my nephew does not like chocolate cake) which was iced in blue butter cream icing then covered in blue fondant with a little logo sign reading "6 HAPPY BIRTHDAY DYLAN". My sister in law requested that the cake be a GIANT CUPCAKE using the same theme as their wedding cake but incorporating the symbols of the fourth year anniversary (blue, green, fruits & flowers). Unfortunately I do not have a photo of their original cake to upload - It was a single tiered cake covered in green fondant and decorated with pigs in mud and signs that read "just married" and "happy as pigs in mud". For this cake i baked a giant chocolate cupcake (at my sister in law's request) and soaked it in raspberry syrup (representing the symbol fruit). It was then covered in green fondant (same as the original wedding cake) and decorated with pigs sitting in chocolate ganache (mud), rocks, blue flowers and a sign reading "still happy as pigs in mud". The cake board was covered in white fondant with green wording "married 4 years". I loved creating this cake and can't wait to create more. Thanks for reading. Tracey XX. I have had technical issues over the last couple of weeks with both of my computers. I am back on air now and have lots to Blog about. For our New Year's Eve celebrations I decided to make some Preservative Free party food for the kids (and some non preservative free food as well) These Marshmallow Biscuits are Arnott's Milk Arrowroots sandwiched together with melted Pascall's White Marshmallows and decorated on top with white royal icing. ALL PRESERVATIVE FREE. These Chocolate Crackles are made from Rice Bubbles, butter, icing sugar and cocoa. ALL PRESERVATIVE FREE. These mini cupcakes are not preservative free. They are baked using a plain cupcake recipe and iced in plain buttercream coloured in a rainbow of colours to the effect of Fireworks. I topped them with crackling candy (you know the stuff that pops in your mouth) also to give the effect of Fireworks popping in your mouth. I also included on the party table a bowl of Plain Kettle Chips (preservative free), Parkers Plain Pretzels (preservative free) and a platter of watermelon, grapes, blueberries and strawberries. Has anybody ever tried their children (or themselves) on a preservative free diet? I know a preservative free diet for most means preservative free only. Our children don't have intolerances to preservatives however, I do believe that if we can minimise preservatives a little bit it can only help. Preservative Free (and non Preservative Free) party food will soon be available for purchase from my website. I baked this chocolate slice to take to our family Christmas Dinner. A very special member of the family is celiac and I usually try to make something that she can eat. The slice is decorated with either icing sugar or drinking chocolate and handmade christmas decorations made from sugarpaste. This was the cake I created for mum's 60th Birthday Cake. It was created to match her invitations. Do you remember the invitations??? The cake itself is an alternately layered chocolate and pink vanilla victoria sponge, soaked in vanilla sugar syrup and sandwiched together with my secret flavoured white buttercream. I tinted sugarfondant to match the invitations and made gerberas and spots to decorate the cake along with a 60 cutout. This was my first attempt at a chocolate collar. Dark chocolate of course. I was a little too eager to peel the plastic backing off the chocolate, hence the little hole in the above photo. Otherwise I was happy with the way it turned out and can't wait for my next chocolate collar. This time I will let it set properly. This cake tasted fantastic and Mum (along with other guests) loved it. I got lots positive comments which is always good. These cookies were created for a teacher to give to her students as a Xmas gift. They are baked using my Honey Jumble recipe and iced in Royal Icing. All bagged up in cello bags, tied with a red ribbon and finished off with a gift tag saying Merry Christmas. My sister in law asked me to bake her some Christmas cookies to hand out to her fellow staff members as a christmas gift. I only had a snowman and a christmas tree cutter and decided to do a test run first... Christmas Tree cookie - Iced in Green royal icing and decorated with a handmade gold lustre star, red royal icing baubles and white and gold royal icing piped tinsel. I liked these Christmas trees. This is my snowman cookie. I am not happy with the way this one turned out. He was iced in white royal icing with a sanding sugar outline and decorated with a handmade sugarfondant hat and royal icing eyes, nose, scarf and buttons. My kids thought the cookies were awesome and took them in their lunch boxes to school the next day.
